MADE WITH PASSION ON THE ENGLISH-WELSH BORDER

Border Sun bottle lying in secondary fermentation

“Methode Traditionelle”…

Border Sun is created using the ‘methode traditionelle’ made so famous in the champagne houses of France. After harvesting and pressing, the apple juice is fermented to create a very dry apple wine. This wine is then put into individual bottles, ‘primed’ and laid down to achieve secondary fermentation which adds the distinctive fizz. Fifteen months later the bottles are ‘degorged’ to ensure crystal like clarity and a ‘dosage’ of sugar and local apple brandy is added to give Border Sun its unique, complex and long lasting flavour.

Flavour…

Made from a blend of five heritage apple varieties matured in our family orchard.  Border Sun is crafted over 2 years, to deliver the perfect blend of full bodied and balanced apple flavour, brought to life by just the right amount of acidity and effervescence. Subtly fortified with local apple brandy.

With food …

Border Sun, with just 10% ABV, makes a perfect ‘aperitif’, but its depth and complexity also make it a great accompaniment to all foods, but most especially pork dishes, charcuterie and cheese. It can also be used as a replacement for sparkling wine in any of your favourite summer and winter cocktails.
